A little while back at Mom’s (My Organic Market), I was introduced to this lovely tabouleh salad that uses hemp seeds for the “grains” instead of bulgur wheat or quinoa or any other creative ingredient I’ve seen used in tabouleh such as cauliflower rice.
I was excited, because not only did it taste good, it was nut-free and grain-free. While I had tried hemp seed protein powder, I had not yet enjoyed plain hemp seeds. It basically exceeded by expectations because I really didn’t like the protein powder all that much. But this salad is really quite wonderful, as well as very easy. Enjoy!
HEMP SEED TABOULEH (gluten-free, grain-free)
Servings: 4-6
Ingredients:
1 cup shelled hempseeds (you can find these at most health-food stores in the bulk section)
1 cup fresh parsley, finely chopped
1/2 cup fresh mint, finely chopped
1 cup cherry tomatoes, halved (delete for nightshade-free and add more cucumbers)
1/2 cup black olives
1 cucumber, peeled and chopped
1 lemon, squeezed
1/2 cup olive oil
1/2 teaspoon sea salt
Steps:
1. Mix all the ingredients together in a large bowl until combined. Chill for 30 minutes before serving.
